I don't know too much about metals, but I was just wondering has anyone ever made an exhaust out of stainless steel, with say a pipe bender and spring to make the upper parts and maybe folding a sheet to make the cones?
Does stainless steel still stay shiny under hot temperatures or does it rust?

It won't rust but it does have a tendency to turn black under extreme heat ( up near the cylinder head)

Scania Stainless Steel is a very common material for exhausts as Terry said it tends to discolour slightly with excessive heat, often referred to as blueing. Bending your own would be easy enough if you have the right equipment although you would have to then weld on the collar at the end where the retaining collar goes. Making your own silencers again given the right equipment would be achieveable although if you have no previous sheet metal experience it may be somewhat of a challenge as not only do you have to form the cones you then have to baffle it as well. Stainless is a much harder metal to work with for the hobbyist than mild steel as it is harder too bend, cut, fold and weld. I think pattern downpipes would be the way to go and then there are a load of custom silencers which are readily available on ebay and from custom bike shops.

Pattern downpipes , or any other pattern part for that matter , are parts that are identical in function to an original ( in some cases better than original ) but made by a third party ( non manufacturer original equipment. )

And usually Cheaper than genuine parts Genuine Honda ones Scania are like hens teeth anyway
