I have a similar issue on running lean...not as dramatic as yours though. Then again I'm not thrashing it at hight revs 😀 Why are you considering upping the jets and not adjusting the mixture screw or checking carbs are clean, etc? On the fuel issue I'm using E5 which has a higher octane than E10. Which fuel do you think will burn hotter?

Hello ethanol is not as efficient as petrol so you need more to do the same thing most of my bikes are happy on e10 so that's what they get.i up the jets on all my bikes when I get chance mainly because they do not have the original exhaust system on and most manufacturers set up on the lean side enny way .not to make them go faster I find they run better in the mid range and are more responsive and run cooler. I fitted larger jets a long time back on the superdream I think I went one size up .I do not frash the bike but if you want these bikes to go 7 to 9 thousand is were the power is more so on the 250.you get people on this site saying they can only get 60 tp 65 out of there bike you need to kick down some gears and it will come into life.i have had the 400 for over 15 years and ride it like I ride all my bikes and if I am on a motorway or national speed limit the bike will be at that speed as it was and running on e10 it is running hot
