Ever since I was brave enough to take the carbs off and clean over winter I’ve had a small issue with the tickover ie can’t set it quite right. I’ve been messing with it for months turning the knob to get it right but as soon as you Rev it after adjusting it , it will change to either high Rev or not enough is it something to do with the cable do I need to adjust it as I know the tickover knob is working ??

I'd start with the easiest possibility first, check you have a small amount of freeplay in the throttle cable.

It doesn't really matter which you use, just adjust till you have small amount of play at the twistgrip, say something like two or three millimetres before it starts to operate the throttle arm on the carb.
